So I bought some fresh thyme the other day just because it smelled so heavenly and I couldn’t resist picking up a bunch. On the long ride home all I could think of was what do I make with this herb. Hmmmm….and then it struck me! Cheese crackers!! Not the fake supermarket ones with the alarmingly orange cheese powder…or so they say. My crackers are made from whole wheat flour, mature cheddar, good ol’ butter and fresh thyme! I mean these cheese crackers are sooooo addictive! You just won’t be able to stop at one! Well not in my case, Obviously! You see my eyes! This, this right here, its Focus and Determination! Yeah! I can do it. I don’t get tempted by food. These were thoughts as the crackers were baking. But you know what? I burnt the roof of my mouth trying to eat them straight out of the oven! *grinning sheepishly* It was irresistible ok!! I take back the focus and determination! I have none, in case of cheese crackers!
100% Whole Wheat Cheese Crackers with a hint of Thyme
- 1.5 cups Cheddar cheese 170gms
- 4 tbsp Butter 57gms, softened
- 3/4 cup Whole wheat flour 95gms
- 1/4 tsp Onion flakes dried- 1/4 tsp
- 1 tbsp Thyme you can use any other herb, even the dried ones will do
- 1/8 tsp Salt
Combine all the ingredients together in a food processor until it forms into a ball. This would take roughly 2-5mins. You can alternately do this in a bowl with a spatula or your hands.
Refrigerator this dough ball for around 30 mins for ease of rolling.
Roll this dough into a thin sheet (about an eighth of an inch). I usually do this between two sheets of cling wrap.
Cut the sheet into shapes or just plain rectangles, as you wish and lay them on the baking sheet lined tray.
Bake them in a preheated oven at 175-degree celsius until golden and done. The baking time depends on the shape and size. Mine took roughly between 10- 15 mins.
