I never thought I would be able to fully enjoy a chocolate cupcake without stressing over the processed and refined ingredients. These cupcakes are made from whole wheat flour without using sugar or butter!!! Yes! You heard it right! This is probably the healthiest a cupcake can get. The best part, No one would know the difference. They were moist, rich, soft and full of chocolate goodness!! These cupcakes were an absolute hit in my house!
100% whole wheat chocolate cupcakes (NO Sugar, NO Butter)
For the chocolate cupcakes:
- 1 & 3/4 cup Whole Wheat Flour
- 1 &1/4 cup Honey
- 3/4 cup Dutch-process cocoa powder
- 2 Eggs
- 1 & 1/2 tsp Baking powder
- 1 & 1/2 tsp Baking soda
- 1.5 tsp Salt
- 1 cup Milk
- 1/2 cup Oil any flavourless oil
- 1 cup Boiling water
- 2 tsp Vanilla extract
For the cream cheese icing:
- 200 gms Cream cheese at room temperature
- 3/4 cup Icing sugar
- 1 tsp Vanilla extract
For the chocolate cupcake:
In a large bowl, mix together the whole wheat flour, cocoa, baking powder, baking soda and salt.
Add in the eggs, milk, oil, vanilla extract and honey and combine well.
To this add the boiling water and mix well. This would form a very watery batter.
Line the cupcake tray and fill each liner just a little more than halfway full.
Bake this in a preheated oven for about 16- 18mins at 175-degree celsius.
For the cream cheese frosting:
Mix all the ingredients until smooth and creamy.
Transfer the frosting into a piping bag and pipe onto the completely cooled cupcakes.
