I first had this pizza when we were living in Bangalore. You wouldn’t believe how good this veg pizza is until you have tasted it! It’s one of my favourite pizza recipes. You can tweak the toppings to your liking. It’s your life, so whatever flavour floats your boat will do! I usually make a batch of the pizza dough when I am free, portion it and freeze them. That way, when you are feeling too tired after work on a Friday, you just have to thaw the dough, put the topping on and bake it! Voila! Gourmet pizza! That too without working a muscle! Perfect recipe for wannabe vegetarians. I assure you, the meat will not be missed! So carnivores, repeat after me! Animals are friends, not food! Just kidding! Peace out!
Aubergine-1 small, sliced, lighted salted and shallow fried (I added a little paprika too)
Baby spinach leaves- one handful
Garlic- 1 clove, minced
Tomato puree- 3 tbsp
Oregano leaves- 1 tsp
Mozzarella- grated, 1 cup
Parmesan cheese- grated, 1/4 cup
1) Wash the spinach leaves well. Add a little olive oil in a pan and saute the spinach along with the minced garlic. Keep this aside.
2) In the same pan, heat a little olive add in the oregano leaves along with the tomato puree and cook it for another 2 mins.
3) Roll out the pizza dough, and smear the tomato puree and spinach mix all over the base.
4) Sprinkle the cheese generously all over the pizza. Cook this in a preheated oven at 170-degree celsius for around 20 mins or until done. after around 10 mins of cooking, add in the fried aubergines and cook for another 10 mins.
