These noodles are the perfect dinner fix if you’re tired from work and literally can’t bear spending a lot of time in the kitchen. These noodles are quite healthy since they are made with whole wheat flour. These 10-minute udon noodles are perfect for those times when only warm, spicy noodles will do. Having this recipe in your cookbook means that all that will ever stand between you and a bowl of these is 10 minutes. The spice in these noodles comes from the Chilli oil which is available in all the Asian stores. The texture of the peanut butter is your choice, can be either creamy or crunchy. I usually make my own. It’s easy guys! Just add some peanut into a food processor and turn on. Voila! 2 minutes later, creamy luscious peanut butter.
Hot and Spicy Peanut Butter Udon In less than 10 mins!
- 5 tbsp Peanut Butter
- 3 cloves Garlic minced
- 1/2 inch piece Ginger minced
- 1 tbsp Dark soy sauce
- 1 tbsp Rice wine vinegar
- 3 tbsp Chilli oil
- 1 Red chilli finely chopped
- 200 gms Udon noodles
- Spring onion for garnish
- 1 tbsp Sesame seeds toasted
Cook the noodles in a pot of boiling water according to the instructions on the packet.
As the noodles are cooking, place a pan over medium heat and whisk in the peanut butter, soy sauce, rice wine vinegar, chilli oil, garlic and ginger until smooth.
Loosen the mixture with a little water (about 3- 5 tbsp). Let this simmer until it forms a thick sauce.
Drain the noodles and add them to the sauce and toss well through the peanut butter sauce.
Garnish with the chilli, spring onion and sesame seeds and toss again. Serve warm.
