Ricotta Doughnuts with pineapple syrup

I saw this recipe on Masterchef Australia and it looked so different and delicious! I just had to make it! And it was pretty easy too. None of the proofing that’s required with the traditional doughnuts. A really easy yet elegant dessert that’s going to get you rave reviews. I mean people are literally going to admire you for all the time you spent in the kitchen when they see these! But between you and me, we know it took less than 30 mins to pull off! They don’t have to know that! *muhahahahahahahahah*

Ricotta Doughnuts with pineapple syrup

Ingredients

For the doughnuts:

  • 1 & 1/2 cups All purpose flour
  • 2 tsp Baking Powder
  • 3 Eggs
  • 1/2 cup Sugar
  • 225 gms Ricotta Cheese
  • 2 tsp Vanilla extract
  • Icing Sugar for dusting

For the pineapple syrup:

  • 1 small Pineapple
  • 1 cup Pineapple juice
  • 1 tbsp Butter
  • 1 tbsp Sugar Depending on sweetness of the pineapple

Instructions

For the doughnuts:

  1. In a large bowl, Beat the eggs along with the sugar until it forms a thick and creamy mixture.
  2. To this add the vanilla extract, flour and the baking powder and fold in gently until combined.
  3. Heat oil in a deep pan on medium heat.
  4. Spoon out the batter and fry the doughnuts until golden brown. Drain on paper towels.
  5. Coat the doughnuts in icing sugar.

For the pineapple syrup:

  1. Core and chop up the pineapple to small cubes. Reserve 2-3 slices for caramelising.
  2. In a pan, on medium-high heat, add the chopped pineapple along with the sugar and pineapple juice cook down until you get a jam like consistency. Keep aside.
  3. In another pan, heat the butter and caramelise the pineapple slices until nice and golden.
  4. Serve warm along with the doughnuts.
